Smoked Paprika is a quite new spice. Smoked paprika is made by smoking with slow-burning oak wood, where the smoke flows out through grills in the base of the smoking house; milling is similar to that for normal paprika.
Smoked paprika has a distinctly smoky flavour with sweet, peppery and slightly bitter flavours beneath this smokiness.
Tip: if your dish has become bitter because you have added too much smoked paprika, add in some soured cream.
