Rice Vinegar is used in Chinese and Japanese cuisine. Chinese rice vinegar comes as red, white or black. Japanese rice vinegar is called su. Generally, the white vinegar is most used, particularly as a flavouring in soups and in sweet and sour dishes. Cider vinegar and wine vinegar are suitable substitutes.
