Provolone is a type of caciocavallo cheese. Originally, provolone was made with buffalo's milk, but today is made with cow's milk. Provolone is a drawn curd cheese and made in Italy, America and Australia. Provolone is made in various shapes - a pear, cone or cylinder - and hung by cords to mature and harden. All provolone cheese is smoked. The younger ones are milder, softer and used a table cheese, whereas the older provolone cheeses are more robust and harder cheeses, which are used for cooking.
