Parma Ham is a very high quality ham from Italy. Parma ham is a raw ham (prosciutto crudo) from Langhirano near Parma, Italy. Hams are rubbed with a seasoning mix of salt, sugar, nitrates, pepper, allspice, nutmeg, coriander and mustard. The hams and seasonings are packed together for 10 days, then the process is repeated. After maturing, the hams are pressed, steamed and rubbed with pepper.
