Mynost and Gjetost are popular Norwegian breakfast cheeses. Mynost is a whey cheese, made by evaporating the water until only the whey albumen and lactose remain as a brownish paste, giving the cheese a sweetish taste and a firm consistency. Originally Mynost was made from goat's milk and was called Gjetost. Some Gjestost can still be found, but it is quite rare.
