Mozzarella is a very well-known Italian cheese. Traditionally, mozzarella was made with buffalo milk, but is now made from cow's milk. Similar to mozzarella, there is a goat's milk cheese, called caprino. Mozarella curds are scalded then lightly kneaded to obtain a firm consistency. Mozzarella is used as pizza cheese, in calzone and fried cheeseballs called suppli al telefono.
