Mixed Spice is the traditional British spice mix for cakes, biscuits and Christmas cake and Christmas puddings. Mixed spice, also, works really well with puddings, e.g. stewed fruits or crumbles.
To make your own mixed spice:
- 3 tsp coriander seeds
- 5 cm cinnamon sticks, crumbled or broken up
- 12 whole cloves
- 2 tsp ginger powder
- 3 tsp grated nutmeg
Grind the coriander, cinnamon and cloves in an electric grinder until fine. Mix with the ginger and nutmeg.
Tip: You should use true cinnamon in this blend rather than cassia cinnamon. Most commercial mixes will use cassia cinnamon, however.
