Mint Sauce

250ml / 1 cup finely chopped mint
60ml / ¼ cup sugar
125ml / ½ cup water
250ml / 1 cup vinegar - cider vinegar or white wine vinegar


  1. Dissolve the sugar in warm water, boiling for a minute or two.
  1. Add finely chopped mint and vinegar, then stir.
  1. Leave for at least 15 minutes before serving to allow the flavours to develop.
