Lobsters are the largest crustaceans, prized for their flavour and generous yield of meat. Lobsters are found in the Atlantic coastal waters from Nova Scotia to North Carolina and Scandinavia to the Mediterranean. The flesh of lobsters is finer-textured than crawfish and at best a lobster can yield 450 - 900 g (1 - 2 lb).
