Italian Rice includes Risotto Rices like Arborio Rice and Canaroli Rice, but also newer coloured rices like black venus rice and red rice. Italian rice tends to be stubby shaped, with round grains.

Arborio rice is the most available for making risotto. Arborio rice releases starch when cooking, creating a sticky, rich flavour that is just what is needed for risotto.
