How To Make Mulled Wine and Other Mulled Drinks
Glühwein is spiced and mulled wine that (as the name implies) gives you a glow. It is a warming draught that was quaffed by huntsmen and mountaineers after a chilly day on the Tyrol. Today, it is a favourite with skiers as a cosy and relaxing drink after a day on the slopes. When making your own glühwein, you need not use the best wine, but anything too ropey and you might suffer a lot the next day.
PREPARATION TIME: 5 MINUTES COOKING TIME: 15 MINUTES INGREDIENTS FOR 6-8 GLASSES: 275/300 ml water 4 - 6 cloves 5 cm rind of lemon rind 75 g caster sugar 1 bottle red wine
Put the water in a 1 litre saucepan. Add the cloves and cinnamon, then simmer for 5 minutes. Put in the lemon rind and caster sugar; keep heating gently, stirring continuously until the sugar has dissolved.
Pour in the wine and heat until the liquid starts to steam, or is just below boiling point - do not let it boil.
Remove the spices and serve as hot as possible in heatproof glasses or mugs.
