Guinea Fowl

Guinea Fowl was originally a game bird, but is now bred to the table. However, the best guinea fowl is still best hung for 2 - 3 days before plucking, dressing and cooking.

Guinea fowl are suitable for roasting, casseroles, braising and essentially are interchangeable with pheasant for the cook.
