Guar Gum

Guar Gum is a water soluble fibre that comes as a white powder. Guar gum is a much stronger thickener than cornflour. Guar gum is similar in characteristics to locust bean gum and can be used to keep ice cream smooth by preventing the formation of ice crystals.
