Grayling are fish similar to trout. Grayling are beautiful, silvery fish, with a thyme-like scent, and are called Thymallus thymallus. Grayling is an excellent cooking fish, best prepared au bleu, or stuffed with herbs, and baked. Grayling is found in the northern hemisphere.
