Gouda is a Dutch cheese. Gouda is an excellent, mild-flavoured cheese with a soft, buttery paste. Gouda is allowed to mature for over one year, so develops an excellent flavour - this becomes one of the great cheeses in the world. After brining, gouda develops a natural rind.
