Glutinous Rice, including Sushi Rice, is gluten-free, with the "glutinous" referring to its sticky texture and mouthfeel that results from its starchiness. sushi rice comes from this grouping. Glutinous rice can be "black" or "white" depending on whether it has been hulled.
When cooked, glutinous rice is sweet and sticky. Because glutinous rice is slightly sweeter than others, it is often used for baking and sweets, as well as making beer.
