Globe Artichoke is a thistle, like cardoon. Young, fresh artichokes can be eaten raw, but older artichokes are boiled and served hot or cold with a dressing - vinaigrette, mayonnaise, or hollandaise sauce. Globe artichokes can be stuffed or baked. Globe artichoke bottoms or fonds can be purchased canned or bottled and eaten as starters or mixed into salads. Artichoke hearts are sold canned or bottled and can be served as a starter or vegetable.
