Finnan Haddie

Finnan Haddie or Findon Haddock is haddocks which have been headed, gutted and split down the backbone. Finnan haddie are then immersed in brine without any dyes added. The fish are then threaded on spears, a protein gloss allowed to develop and then smoked.
