Filé Powder or Filet Powder are key for Creole food especially filé gumbo.

Filé powder comes from the young leaves of sassafras, which have been thoroughly dried and powdered. Filé is a green powder. Filé powder tastes pleasantly eucalypt spiciness and is used to thicken sauces.

If you cannot get hold of filé powder, thicken your gumbo with corn flour and add a really small pinch of cardamom.
