Feta is the classic Greek soft cheese. Feta is made from either goat's or sheep's milk, or indeed a mix of the two. Feta is roughly cut, pressed curd which is ripened in its own whey, which has been salted beforehand. Feta is used in many Greek dishes, especially salads.
