Edam is a Dutch cheese. Edam is a bland, mild, buttery cheese, with a natural rind and a red wax coating, usually matured for 3-4 months. Edam is slightly harder than Gouda, because it has a lower fat content. Edam is sometimes spice with cumin seeds and more mature "old" versions are available.
