Dolcelatte is a blue-veined Italian cheese, meaning "sweet milk". Dolcelatte has a very soft paste, a creamy texture and a greenish-coloured veining throughout. Dolcelatte is a factory made version of the classic Italian blue cheese, Gorgonzola.
