Distilled Vinegars are usually made from malt vinegar. Distilled vinegars are colourless and strong, because the distillation process increases the proportion of acetic acid that they contain. Distilled vinegar is used for pickling, especially for pickled onions because of their strength and the slowness of the rate at which they deteriorate. Manufacturers also use distilled vinegar for making sauces
