WHITE TEAS
White tea: Bai Hao Yin Zhen, Yu Xue Ya 3g tea to 250 ml water (2 teaspoons per 250 ml) 65 - 75oC (149 - 167oF) 5 - 7 minutes White teas are best infused in a small amount of water, e.g. in a gaiwan
White tea: Bai Mu Dan, Hong Xue Ya 3g tea to 250 ml water (2 teaspoons per 250 ml) 75 - 80oC (167 - 176oF) 5 - 7 minutes These white teas can be infused in more volume of water than Bai Hao Yin Zhen, for example, but still in a gaiwan
White tea: Darjeeling white teas 3g tea to 250 ml water (2 teaspoons per 250 ml) 80 - 90oC (176 - 194oF) 5 - 7 minutes Infuse these non-Chinese white teas in a tea pot, with larger volumes of water still
YELLOW TEAS
Yellow tea: Jun Shan Yin Zhen 3g tea to 250 ml water (1½ teaspoons per 250 ml) 75 - 85oC (167 - 185oF) 4 - 5 minutes Infuse in a gaiwan for a yellow tea as strong as green tea, or in a pot for one as weak as white tea
GREEN TEAS
Chinese pan fired green teas: Bi Luo Chun, Dong Shan, Fuding Mao Jian, Huiming, Kamairicha, Tan Huong, Wuyuan Zi Mei. Xin Yang, Mao Jian, Yuzan 2½g tea to 250 ml water (1 teaspoon per 250 ml) 75 - 85oC (167 - 185oF) 3 - 5 minutes Infuse in a gaiwan for the best flavours in Chinese green teas; for a higher quality green tea with more buds, use a lower temperature and less water
Chinese pan fired green teas: Anji Bai Cha, Huang Shan Mao Feng, Huo Shan Huang Ya, Long Jing, Lu An Gua Pian, Lu Shan Yun Wu, Tai Ping Hou Kui, Tian Mu Qing Ding, Wu He, Xue Ya 3g tea to 250 ml water (1½ teaspoon per 250 ml) 75 - 85oC (167 - 185oF) 4 - 5 minutes Infuse in a gaiwan for the best flavours in Chinese green teas; for a higher quality green tea with more buds, use a lower temperature and less water
Japanese steam dehydrated green teas: Gyokuro, Kabusecha, Sencha 2½g tea to 250 ml water (1 teaspoon per 250 ml) 60 - 75oC (140 - 167oF) 3 - 4 minutes The senchado method is best for the highest grades of Japanese green teas. The best gyokuro teas should be brewed at lower temperatures: 50 - 60oC (122 - 140oF)
Japanese steam dehydrated green teas: Bancha, Bocha, Genmaicha 2½g tea to 250 ml water (1 teaspoon per 250 ml) 75 - 85oC (167 - 185oF) 4 - 5 minutes The senchado method is best for the highest grades of Japanese green teas.
OOLONG TEAS (WULONG TEAS)
Oolong teas: Ali Shan, Cui Yu, Da Yu Lin, Dong Ding, Gui Fei, Jin Shuan, Ma Yuan Shan, Shan Lin Xi, Si Ji Chun, Tie Guan Yin, Yu Shan 3g tea to 250 ml water (2 teaspoons per 250 ml) 95oC (203oF) 4 - 5 minutes The cha method is good for oolong teas, rinse (see below) the tea leaves to enable them to unfurl easily
Twisted-leaf oolong teas: Baihao, Da Hong Pao, Mi Lan Xiang, Pinglin Bao Zhong, Qi Lan Xiang, Qian Li Xiang, Rou Gui, Shui Xian, Xhi Lan Xiang 3g tea to 250 ml water (2 teaspoons per 250 ml) 95oC (203oF) 4 - 5 minutes The cha method is good for oolong teas, rinse (see below) the tea leaves to enable them to unfurl easily
BLACK TEAS
Classic black teas: Assam, Ceylon, Darjeeling, Keemun, Kenya, Nilgiri 2½g tea to 250 ml water (1 teaspoon per 250 ml) 95oC (203oF) 3 - 4 minutes For First Flush teas, the water can be cooler at 90o (194o)
Chinese black teas: Bai Lin Gong Fu, Jun Die, Yunnan 2½g tea to 250 ml water (1 teaspoon per 250 ml) 85 - 90oC (185 - 194oF) 4 - 5 minutes Chinese black teas with many golden buds should be infused in cooler water.
PU-ERH TEAS
Pu-erh teas: less than 10 years old 2½g tea to 250 ml water (1 teaspoon per 250 ml) 90 - 95oC (185 - 194oF) 3 - 5 minutes Rinse for 5 seconds before infusing.
Pu-erh teas: over 10 years old and shou pu-erh 3g tea to 250 ml water (2 teaspoons per 250 ml) 95oC (203oF) 4 - 6 minutes Rinse twice for 5 seconds each time.
