Deep-frying is a technique that is used in Chinese cooking in much the same way as in America and Europe, that is to produce crisp textured food. Usually it is used when cooking food wrapped or coated in paper or a better, so protecting the ingredients from burning. Sometimes, deep-frying is used as the last stage in a cross technique style of cooking, which as well as giving a contrast of textures gives the food a golden and appetizing appearance.
