Crayfish are a small freshwater crustacean that confusingly are also called Crawfish like langoustine-crawfish. However, crayfish have claws. Crayfish are found in lakes and lowland streams. To prepare crayfish, treat them like prawns and shrimps. Crayfish are the base ingredientia for the French bisque d'écrevisse.
