Cotechino is an Italian, lean and fat pork sausage. In Italy, cotechinos are made fresh, but a part-cured, part-cooked version is commercially available and distributed widely. The fresh cotechino needs several hours cooking time, whereas the commercial cotechino takes about 30 minutes. Cotechino is usually served hot with lentils.
