Clear Simmering

In China, the technique of clear simmering is used to cook meat, fish and clear soups in an earthenware pot over a low charcoal heat. In Europe and the USA, these methods can be achieved by cooking in a heavy flameproof casserole pot over a low heat or in a cool oven. Few, if any, flavourings are used during the cooking, with additional ingredients added during the last few minutes of the cooking time.
