Chestnut Flour is made from grinding down chestnuts, so is naturally gluten-free. Chestnut flour normally comes from France or Italy, being known as farina di castagne or farina dolce in Italy, because it is sweet tasting. Chestnut flour has a great flavour, and has a rich, dark brown colour; chestnut flour creates a beautiful chocolate-brown colour into your loaf, which adds a lot of culinary drama - bread with chestnut flour.
Chestnut flour works well in savoury and sweet baking. Chestnut flour can be used on its own or in combination with other flours for more complex flavour profile. However, it does not make a bread on its own and must be mixed with flour to allow it to rise; if used in bread making, it results in a dense crumb.
