Cherries are sweet and sour in taste, with a slight waxiness of mouthfeel. Popular types of cherry include: Frogmore Early, Merton Heart, Napoleon Bigarreau and White Heart, but perhaps the best for cookery is the Morello Cherry. Morello cherries are good for jams and fruit pies. Cherries are available fresh, canned and are also used in liqueurs - kirsch.
