Brussels Sprouts are miniature cabbages that grow on tall, green and woody stems. Brussels sprouts should be harvested as small buds and cooked just enough to leave a firm bite. Brussels sprouts are best as a winter vegetable and are a mainstay of British Christmas Day food, but their season is from August to August. Recipes include cooking Brussels sprouts with chestnuts or walnuts, or made in a soup. Use similarly to cabbage.
