Blue Cheshire

Blue Cheshire is a large, cylindrical cheese that is a blue version of dyed Cheshire cheese. Blue Cheshire is one of the finest blue cheeses. Blue Cheshire ripens and "blues" only accidentally, although cheese-makers try and encourage the mould by pricking the cheese with needles and maturing it in a favourable atmosphere.
