Bamboo Shoots are the conical shoots of a species of bamboo, sold fresh in Asia, but canned elsewhere. Bamboo shoots are crisp and slightly acidic. Bamboo shoots are used raw or lightly cooked, generally in a stir-fry and complement pork very well, because of their acidic taste.
