Aspic is a light jelly used to glaze or embed cold dishes in jelly with fish, meat and eggs. Aspic can be purchased as a powder or made from gelatin and stock cubes.

Aspic can be used as a garnish that helps with serving cold dishes. It can be curved or used to surround meats - especially in pork pies - or chopped or piped. Aspic's main use is as the basis for moulded dishes that can be a very decorative component of a buffet. This can include some very colourful ingredients like pieces of red pepper.
